Delicious Pumpkin Banana Bread Recipe with Canned Pumpkin and Spicy Apple Sauce
Imagine eating a slice of delicious pumpkin bread which has the added benefit of fruit. Well, here is an easy scrumptious pumpkin bread recipe with canned pumpkin and bananas, together with a spicy apple sauce that is sure to have you licking your fingers.
Items needed:
- Two ripe bananas, peeled and mashed finely
- One (1) cup of canned pumpkin (drained and mashed to remove any big chunks)
- 1/4 cup of canola oil or extra virgin olive oil
- Two eggs (at room temperature) (you can separate the egg whites and egg yolks and use them separately)
- Two (2) cups of wholewheat flour (or one cup of wheat flour with one (1) cup of refined flour)
- Half a cup of rolled oats
- One teaspoon of baking powder
- 1 teaspoon of bicarbonate of soda
- Half (1/2) teaspoon of salt
- 2/3 cup of coarse-grained sugar
- Half (1/2) teaspoon of grated nutmeg
- Half (1/2) teaspoon of grated ginger
- Half a teaspoon of ground cinnamon
Method:
- Preheat the oven to 350 F.
- Grease and flour a 9x3 inch bread loaf pan and place aside.
- Take the eggs in a mixer bowl and add the banana and pumpkin to the mix. Beat together using an electric mixer at a low speed.
- (Note: If you're using egg yolks and egg whites separately, then add the banana and pumpkin to the egg yolks and whisk. The egg whites should be added after mixing.)
- Add the sugar and oil to the mix and whisk some more.
- Sift the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, salt and rolled oats together in a mixing bowl.
- Add this dry mix to the egg-banana-pumpkin mix and blend well till the mix is just moist.
- Pour the prepared batter in the greased loaf pan. Smooth down the top.
- Bake in the preheated oven at 350 F for approximately an hour until the top of the bread is firm.
- Take the bread out of the pan and cool before cutting in slices to serve.
Spicy Apple Caramel Sauce Recipe
This sauce is a perfect accompaniment to the bread.
What you'll need:
- 1 cup of heavy cream
- 1/2 cup of apple juice
- One star anise
- One (1) in. piece of fresh ginger
- 4 cloves
- Two (2) cinnamon sticks
- 1/8 teaspoon of nutmeg, grated
- 1 1/2 cups of sugar
- 1 tablespoon of apple cider vinegar
- 1 tablespoon of apple schnapps
- Half (1/2) cup of water
Method:
- In a saucepan, heat the cream, apple juice, cinnamon, cloves, ginger, nutmeg and star anise on a low heat. Simmer for 8 minutes. You must not stir the ingredients.
- Remove from the heat and sift the contents into a clean bowl.
- In a clean pan, heat the vinegar, sugar and water until the mixture turns into an amber brown liquid.
- Slowly stir the cream mix in the vinegar mix and whisk well.
- Add the apple schnapps and heat for a further thirty seconds.
- Remove the pan from the heat and serve warm with the pumpkin bread.
