Muffins and Coffee - The Best Combination for Morning Tea

Warm muffins go fantasically with a morning tea party. Muffins are easy to make and just as easy to eat. In fact, many people say that they favor muffins over cakes when they're in a hurry during tea time because they are more convenient to eat. One of the most popular banana bread recipe is this one as the primary ingredient is a nutritious fruit. Below is a yummy coffee-banana bread muffin recipe which you can prepare at home in practically no time.

What you'll need:

- Ripe and mashed bananas - three (3) to four (4)

- Softened butter - 1/3 cup

- Sugar - three-quarters (3/4) of a cup

- Egg - 1

- Vanilla essence - 1 teaspoon

- Espresso - one (1) tablespoon

- Flour - one and a half (1 1/2) cups

- Chopped walnuts - 1 cup

- Baking powder - one (1) teaspoon

Preparation:

- Pre-heat the oven to 350F.

- This recipe caters for twelve (12) muffins; hence, grease and flour twelve (12) muffin molds.

- In a mixer bowl, break in the egg and beat 'til fluffy.

- Add the sugar and stir using a wooden spoon.

- Add the mashed bananas and softened butter and mix using a wooden spoon until the ingredients are well incorporated.

- Add in the vanilla essence and espresso and mix all the ingredients together well.

- In another bowl, mix together the flour, walnuts and baking powder.

- Sprinkle the dry ingredients over the top of the wet ingredients and mix well until you get a smooth batter.

- Pour the finished batter in the muffin molds (fill only three-quarters of the way).

- Bake in the heated oven for 25-30 minutes till the muffins are done. You can check by inserting a toothpick; if it comes out clean then the muffins are done.

- Cool for approximately 10 minutes before removing from the mold, then cool on a wire rack.

While cream cheese frosting is the typical frosting that is served with banana bread, there are some fascinating frosting recipes that you can try out.

Browned Butter Frosting

What you need:

- Butter - third of a cup

- Confectioner's sugar - three cups

- Vanilla extract - one teaspoon

- Milk - four (4) tablespoons

To prepare:

- Heat the butter in a pan over low heat till just browned.

- Remove from the heat and cool.

- Add the confectioner's sugar, vanilla and milk to the butter and mix well to get a spreading consistency.

- Spread on the cooled muffins, decorate with cut bananas and cool some more before serving.

- You may also put the frosting in a piping bag and pipe it in any design on the muffins.

Passionfruit Glace Icing

What you need:

- Icing sugar - one cup

- Passionfruit pulp - 1 1/2 cups

To prepare:

- Mix together the icing sugar and passionfruit pulp in a mixer bowl.

- Drizzle over the baked muffins and cool for some time prior to serving.
