Recipe for Simple and Quick Guacamole

This recipe will make sufficient guacamole for 2 individuals, but you can effortlessly double or triple it.

So, what ingredients do you need:

1 avocado, 1 really tiny red onion, 1 lemon juice (you can squeeze a lemon or just buy lemon juice in the shop), salt, black pepper,

and also a blender.

That's it.

Directions

1. This is what you'll need. Use a little onion or guacamole is going to be too strong. You may nevertheless add some later, just do not begin with too much. Naturally you could use a bigger onion and chop it in two :). You could also employ the usual white onion but I've discovered that red ones work better.

2. First peel the onion and chop it in a couple of large pieces so it fits into the blender. Now place 2/3 of the onion you're going to make use of into the blender and save the remaining 1/3 for later.

3. Now for the avocado. Initially slice the avocado in half. Don't slice the seed, just make an incision about the avocado. Then grab each half with a single hand and twist. One half should nicely separate from the seed.

4. Now take a spoon and take away the avocado meat from its skin.

5. Put the avocado into the blender together with the onion.

6. Mix till you get a good and even texture.

7. Now take the rest of the red onion (the 1/3 from the start) and cut it into little pieces working with a knife. What is the point of this? I like the flavor of the onion to equally merge into the guacamole - this is accomplished by blending onion and avocado together in a blender. But I also like the tiny onion pieces in the guacamole. these pieces give better texture to the guacamole, make it a bit chunky and it appear more home-made :). In fact - you can do the same with avocado. Combine 2/3 of it and merely smash the remaining 1/3 into the guacamole with a fork. This way you will have a nice tasting base together with some chunks.

8. Now take a great guacamole bowl and put in the mixed avocado/onion from the blender. Add chopped red onion, salt, pepper and lemon juice. How much lemon juice? This is dependent upon your taste. I generally start off by adding little and then keep adding some more until you are satisfied. Taste your guacamole in between.

9. Now take a fork and combine your guacamole until the chopped red onions are equally spread through the guacamole and lemon juice has disappeared into the mixture making guacamole just a little bit smoother and less dense.
