Easy Dessert Using Bananas and Blueberries

Banana Bread is a very popular breakfast due to its delightful taste and great nutritional value. The following quick banana bread recipe isn't just simple to prepare but will also disappear quickly from the plate.


- Flour - Two and a half cups

- Sugar (white) - 1/2 cup

- Sugar (light brown) - Half (1/2) cup

- Baking powder - One (1) tablespoon + half (1/2) teaspoon

- Salt - One (1) teaspoon

- Cinnamon - One-eighth (1/8) teaspoon

- Shredded coconut - Half a cup

- Vegetable oil - Three (3) tablespoons

- Milk - One-third of a cup

- Egg - One

- Vanilla - 2 teaspoons

- Ripe bananas (medium-sized) - Three (3)

- Pecans (sliced) - One cup

- Blueberries (frozen) - 2 cups


- Preheat the oven to 350F.

- Grease an 8-inch bread loaf pan and place aside.

- In a bowl, take the ripe bananas and mash them using a fork.

- Add the egg, oil, white sugar and brown sugar to the bananas and use a blender at very high speed to mix all the ingredients for approximately 30 seconds.

- Add the milk and mix for 10 seconds more.

- Add the shredded coconut and mix all the ingredients well.

- In a separate bowl, sift the flour and baking powder.

- Add the flour mix to the prepared banana mix and stir to blend all the ingredients well.

- Add in the chopped pecans.

- Fold the frozen blueberries in the mix. Do not let the blueberries defrost.

- Pour the batter in the greased loaf pan.

- Bake in the preheated oven for approximately fifty-five (55) to sixty minutes until the bread is firm on top and springs back when touched.

- Remove the loaf pan from the oven and allow it to cool for 15 minutes before taking the banana bread out of the pan.

- Cool the bread on a wire rack.

- Wrap firmly in plastic film and freeze for a day. Use the bread the next day.

- Cut in slices to serve.

White Icing

Items needed:

- Milk - One (1) cup

- Flour - Five tablespoons

- Vanilla - 1 teaspoon

- Butter (softened) - One cup

- Coarse-grained sugar - One cup


- Mix the milk and flour in a bowl over gentle heat until the blend thickens.

- Remove from the heat and let it cool completely.

- In a fresh bowl, cream the butter, sugar and vanilla till fluffy.

- Add the flour and milk mixture to the butter mix and mix to get a smooth fluffy icing.

Banana Butter Icing


- Butter (softened) - Quarter (1/4) cup

- Bananas (mashed) - 1/2 cup

- Lemon juice - Half a teaspoon

- Vanilla extract - Half (1/2) teaspoon

- Confectioner's sugar - Three and a quarter cups


- Cream the butter, lemon juice, mashed bananas and vanilla extract in a mixer bowl 'til fluffy.

- Gently add the confectioner's sugar to the mix and beat well to create a smooth frosting.

- Spread over the bread and enjoy!
