The perfect, Most-Requested Blueberry Banana Bread

1/2 cup fresh blueberries, 1 5/8 cups all-purpose flour, 1/2 cup quick cooking oats, 1/2 cup chopped pecans, 1 teaspoon baking soda, 1/4 teaspoon salt, 1/2 cup shortening, 1 cup white sugar, two eggs, 1 cup mashed bananas,


Preheat the oven to 350 degrees Fahrenheit (175 degrees C). Set a 9x5 inch loaf pan by coating it using oil or cooking spray, and coating it all round using flour.

In a medium bowl, mix blueberries with 2 tablespoons of flour. Pitch and gently combine them jointly with oats, nuts, 1 1/2 cups flour, soda, and salt.

Inside a large container, cream shortening well. Gradually pour sugar, whisking after every single addition until light and fluffy. Stir in eggs gently, one at a time and whisk adequately just after each addition. Incorporate mashed banana. Whisk in blueberry mixture to creamed mixture. Combine using a spatula just till well-blended, moist, and without big lumps. Put batter into greased loaf pan.

Bake for 50 to 55 minutes. Check out completeness by placing a wooden toothpick in the center of the loaf. It need to come out clean. Allow the newly baked blueberry banana bread to cool down inside loaf pan for 10 minutes. Remove from pan, and allow it to cool completely over a wire rack prior to slicing. Slice and then serve!
